Roasted Brussels Sprouts

Servings: 4 people

Ingredients

  • 6 oz bacon
  • 3 Tbsp capers, drained
  • 1 quart Brussels sprouts, trimmed and halved
  • 2 Tbsp balsamic vinegar
  • 3-4 Tbsp olive oil
  • 1/4 cup pine nuts or pecans, toasted (or roasted pistachios)
  • 1/4 cup dried cranberries
  • 1/4 cup golden raisins or any kind of raisin
  • 1/4 cup feta or goat cheese, crumbled
  • salt and pepper to taste
  • hot honey (optional)

Instructions

  • Preheat oven to 400 degrees F
  • In a medium pan over medium heat, cook the bacon until crisp. Remove bacon from pan and set aside.
  • Add the Brussels sprouts to the bacon drippings and cook for about 5 minutes or until they start to brown up.
  • Stir in balsamic vinegar, capers, ground pepper and olive oil and place in oven for 20-30 minutes, tossing every 8-10 minutes, until caramelized and sprout centers yield nicely to fork.
  • Remove from oven and mix in crumbled bacon, nuts, dried cranberries, raisins and feta (or goat) cheese, salting to taste.
  • Drizzle lightly with hot honey (sriracha mixed with honey). Serve.
