Cold Brew Coffee for Every Season

It really is the simple things…

It’s been a really hectic few months around here and I have found myself taking the time to enjoy two of my favorite comfort foods– cold brew and sourdough toast. Is there a better way to start your day? And it doesn’t even matter whether we are heading into winter or summer. Still cold brew. Let’s start with the cold brew on this post and I will share more about the sourdough on another post.

Most mornings, I start my day with a glass of my own cold brew, sweetened with a shot of maple syrup and topped with homemade cashew milk. I have used several different beans but recently discovered this amazing cold brew bean from the Chosen Bean. You can even get it in a decaf! I am so impressed with its smoothness.

When brewing, I cut my coffee beans with pure chicory, which adds an earthy, caramel-like undertone as well as a healthy dose of prebiotic. I use Community 100% Pure Chicory, at a 1:3 (chicory to coffee) ratio. 24ish hours later, it is ready! I have two of cold brew pitchers so that I can make double batches for entertaining.

Fresh cashew milk is so lovely and so easy to make yourself. I order cashews in 5# bags and keep them in the freezer. I soak 1/2 cup of cashews in 2 cups of really hot water for about an hour, drain them and throw them into my trusty Vitamix along with 2 cups of water and a pinch of sea salt. Mix at high speed for 45 seconds and voila! You have a pint and a half of amazing cashew milk that will stay fresh in the fridge for about 3 days.

Some things are worth the little bit of extra effort and cold brew is definitely that thing.
